Summary: | The purpose of the present investigation was to implement Standardized Operational and Sanitation Procedures (POE / POES) in the process area of the Dairy Industry "NAKARLAU" to achieve safety in its product. For this, an initial diagnosis was made, which consisted of: measuring the percentage of non-compliance with Good Manufacturing Practices (GMP), by means of a checklist; microbiologically analyze the cheese produced in the Industry; and, through the observations made with the two previous steps, determine possible causes of product contamination. It was found that the initial breach of BPM was 51%, the microbiological status of the cheese was outside of the INEN 1528 standard (with respect to Enterobacteriaceae and Staphylococcus aureus), and among the possible causes of cheese contamination the lack of pasteurization prevailed and lack of sanitation in the process area. Next, the design of manuals for general and specific procedures of BPM and POE and POES control cards were carried out in order to be implemented and to measure the efficacy in safety. Finally, microbiological analyzes were performed on the post-implementation product and the decrease of the microorganisms present could be demonstrated, together with student's t-test and binary logistic regression, the before and after was compared and it was determined that the implementation of these programs is efficient to reach safety. In addition, the breach percentage of BPM decreased to 21%, obtaining 79% of compliance, which also contributes to obtain innocuous products. |
