الملخص: | The purpose of this research was to implement a Good Manufacturing Practices (GMP) manual to improve the safety of dehydrated bananas in the microenterprise Yara Futuro Agrícola S.A., for this purpose, an interview was conducted with the manager, with a pre-and post-implementation checklist to obtain an initial diagnosis of the microenterprise`s status, resulting in 42% compliance, 49% noncompliance, and microbiological analysis were performed on 5 samples of dehydrated bananas; to evaluate the microbial load present in the food as established by NTE INEN 2996 (with respect to Salmonella, Echerichia coli, mold and yeast counts), followed by an operational analysis and selection of the appropriate technology to ensure the quality of the dehydrated banana. Subsequently, a GMP manual was prepared to comply with the requirements established by Resolution ARCSA 0.67. During post implementation, 73% of the requirements were met and 18% were not met, allowing for continuous improvement of the final product. The results showed that the GMP manual had a positive impact on ensuring the safety of the dehydrated bananas produced by the microenterprise. |
