| Summary: | The objective of this work was to evaluate the implementation of Good Manufacturing Practices to improve the safety of cane liquor at the Alcívar Factory. An initial diagnosis was made that consisted of measuring the percentage of compliance with Good Manufacturing Practices (GMP), through the checklist, physical-chemical analysis established in the NTE INEN 362: 2014 and an operational analysis for the selection of the technology adequate, vital to determine the causes of the lack of safety.It was obtained that the initial GMP compliance percentage was 22%, taking as reference the critical parameters considered by the ARCSA. The results of the physical-chemical analysis of the diagnosis show that requirements such as alcoholic degree, furfural, higher alcohols are within the parameter stipulated to consider cane liquor suitable for human consumption, however, the presence of 14.76 mg / 100 cm3 of methanol is evidenced while the INEN 362:2014 standard allows a maximum of 10 mg / 100 cm3. After obtaining the results of the diagnosis, a GMP manual was designed which reflected the regulations (ARCSA 067). Finally, laboratory analyzes were performed and full compliance with the parameters of INEN 362: 2014 was obtained, together with the student's T test, the before and after implementation was compared, demonstrating the effectiveness of the BPM program. The final global compliance percentage of BPM increased by 20% compared to the initial compliance, reaching 42%. |
