An initial diagnosis was made that consisted of measuring the percentage of compliance with Good Manufacturing Practices (GMP), through the checklist, physical-chemical analysis established in the NTE INEN 362: 2014 and an operational analysis for the selection of the technology adequate, vital to determine the causes of the lack of safety.It was obtained that the initial GMP compliance percentage was 22%, taking as reference the critical parameters considered by the ARCSA. The results of the physical-chemical analysis of the diagnosis show that requirements such as alcoholic degree, furfural, higher alcohols are within the parameter stipulated to consider cane liquor suitable for human consumption, however, the presence of 14.76 mg / 100 cm3 of methanol is evidenced while the INEN 362:2014 standard allows a maximum of 10 mg / 100 cm3. After obtaining the results of the diagnosis, a GMP manual was designed which reflected the regulations (ARCSA 067). Finally, laboratory analyzes were performed and full compliance with the parameters of INEN 362: 2014 was obtained, together with the student's T test, the before and after implementation was compared, demonstrating the effectiveness of the BPM program. The final global compliance percentage of BPM increased by 20% compared to the initial compliance, reaching 42%. |

The final global compliance percentage of BPM increased by 20% compared to the initial compliance, reaching 42%.El presente trabajo tuvo como objetivo evaluar la implementación de Buenas Prácticas de Manufactura para la mejora de la inocuidad del aguardiente de caña en la Fábrica Alcívar. Se realizó un diagnóstico inicial que consistió en medir el porcentaje de cumplimiento de Buenas Prácticas de Manufactura (BPM), mediante la lista de chequeo, análisis físico-químicos establecidos en la NTE INEN 362:2014 y un análisis operacional para la selección de la tecnología adecuada, vitales para determinar las causas de la falta de inocuidad del aguardiente. Se obtuvo que el porcentaje de cumplimento de BPM inicial fue de 22%, tomando como referencia los parámetros críticos considerados por el ARCSA. Los resultados de los análisis físico-químicos del diagnóstico muestran que requisitos como grado alcohólico, furfural, alcoholes superiores están dentro del parámetro estipulado para considerar al aguardiente de caña apto para el consumo humano, sin embargo, se evidencia la presencia de 14,76 mg/100 cm3 de metanol mientras que la norma INEN 362:2014 permite un máximo de 10 mg/100 cm3. Después de obtener los resultados del diagnóstico, se procedió a diseñar un manual de BPM el cual reflejó las normativas (ARCSA 067). Finalmente se realizaron análisis de laboratorio y se obtuvo el cumplimiento total de los parámetros de la INEN 362:2014, en conjunto con la prueba T de student se comparó el antes y después de la implementación demostrando la eficacia del programa BPM.
