Riassunto:The objective of this research was to evaluate the quality and safety of milk in the San Isidro Dairy Collection Center of the Sucre canton. For field development, 178 samples from metal drums were used, which were subjected to physicochemical analysis, somatic cell count and determination of antibiotics and adulterants. As a result of this analysis, alterations were obtained in the parameters % fat (4%), % non-fat solids (15%), density below the range (40%), decreased protein and lactose (3%), acid pH ( 61%), alkaline pH (2%), added water (27%) and titratable acidity below range (1%) and increased (50%); furthermore, 7% of the samples showed a somatic cell count (SCC) >500,000 ccs/cm3; positive correlation (Pearson) was determined between the variables density-titratable acidity (TA) (1.00), protein-non-fat solids (SNG) (0.99), lactose-SNG (0.99), lactose-protein ( 0.99), pH-AT (0.89), added water (AA)-AT (0.99), somatic cells (SSC)-fat (0.60); In the same way, a negative correlation was determined between variables AA-lactose (-0.87), AA-density (-0.72) and AA-protein (-0.86); on the other hand, 100% of the samples analyzed were negative for both antibiotics and adulterants. It is concluded that 78% (139/178) of the analyzed samples presented alterations in several parameters regarding the physicochemical composition, for which it is considered a low quality milk; In addition, 7% of the samples present worrisome values in the somatic cell count, which represents the possible existence of subclinical mastitis in milking animals.
