Evaluación del efecto de las estaciones climáticas en la calidad microbiológica y fisicoquímica de la leche de vaca post ordeño

The purpose of this research was to generate a baseline by evaluating the effect of the climatic seasons on the microbiological and physicochemical quality of post-milking cow's milk, also contributing to the institutional project with the topic of: Characterization and improvement of hygienic quality -Sanitary in dual-purpose bovine systems in the province of Manabí. For this, an interview was conducted with the manager and several of the members of the Cooperativa de Producción Agropecuaria de Chone, who provided a list of the members of the farms under study, then the georeference card was applied where to locate the farms in In the study, the GPS equipment was used which provided the coordinates such as latitude, longitude and altitude, in addition, relevant data was obtained from the farms under study in the Canton Chone, an observation sheet was also applied at the time of milking to identify the main sources of microbial contamination during this activity, because there are bacteria that intervene directly in the contamination of milk, in addition two samples were taken in the ten farms under study, alternating one week between the farms investigated, to which Physicochemical analyzes such as acidity, alcohol test and Reductase were carried out; also microbiological analyzes such as E. coli, total coliforms and mesophilic aerobes, which were carried out during the winter and summer climatic seasons. It is concluded that in the T student tests applied to raw milk in the evaluated physicochemical aspects (acidity, alcohol and reductase) only the reductase reflects significant variation between the climatic seasons and with respect to the microbiological results (E. coli, total coliforms and mesophilic aerobes) showed a significant incidence between the study stations.
