A completely randomized design was applied, with three repetitions. Analysis of pH, foam level, yield, percentage of moisture content and volatile matter and only the percentage of total fat matter and sensory evaluation were carried out in treatments. All treatments comply with the INEN 841 standard by not exceeding the maximum allowed in pH and percentage of moisture content and volatile matter, in foam levels T1 (Chone) and T5 (Calceta) they have the highest values, over 70 cm3. In performance according to the Kruskal Wallis test there were significant differences (p<0.05), demonstrating that the T4 treatment belonging to Junín obtained a higher performance with 93.41%, compared to the rest that were above 90%. In the sensory analysis, the judges determined that there are significant differences (Sig. <0.05) for the variables of color, odor, exfoliant and foam, while the null hypothesis is retained for the texture variable. It is concluded that all treatments are suitable for the production of toilet soap, both in terms of physical, chemical and sensory characteristics. |

It is concluded that all treatments are suitable for the production of toilet soap, both in terms of physical, chemical and sensory characteristics.La investigación tuvo como objetivo determinar la calidad físico química y rendimiento del jabón de tocador elaborados a partir de aceites residuales provenientes de cinco chiflerías de diferentes cantones de la provincia de Manabí: Chone, Tosagua, Calceta, Bahía y Junín, como tratamientos, incorporando la borra de café para darle un efecto exfoliante. Se aplicó un diseño completamente al azar, con tres repeticiones. Se realizaron análisis de pH, nivel de espuma, rendimiento, porcentaje de contenido de humedad y materia volátil y solo a tratamientos el porcentaje de materia grasa total y evaluación sensorial. Todos los tratamientos cumplen la norma INEN 841 al no exceder el máximo permitido en pH y porcentaje de contenido de humedad y materia volátil, en nivel de espuma T1 (Chone) y T5 (Calceta) tienen los valores más altos, sobre 70 cm3. En rendimiento según la prueba de Kruskal Wallis hubo diferencias significativas (p<0,05), demostrando que el tratamiento T4 perteneciente a Junín obtuvo un mayor rendimiento con 93,41%, en comparación al resto que estuvieron por encima del 90%. En el análisis sensorial los jueces determinaron que hay diferencias significativas (Sig. <0,05) para las variables de color, olor, exfoliante y espuma, mientras que para la variable textura se retiene la hipótesis nula.
