要約:The objective of this study was to determine the feasibility of implementing a nutritional bread processing plant using sweet potato flour (potato Hipomea), on the site Casas Viejas in the City of Calceta. According to the market research it was obtained important data, sweet potato bread has an acceptance of 99 % among people who consumed within the Bolivar canton, with a demand of 4,148 kg/month, covering 15% of the population. The technical study established the optimal plant size and distribution at 300 m2, as well as the machinery and equipment, which will have the availability and cost of raw materials ($ 2.25 kg), an microbiological - bromatological analysis were performed on bread. The economic study of the project was calculated giving the following indicators: net present value (NPV) was $ 215,490.72, the internal rate of return (IRR) was 37 %, becoming a good project profitability, and the equilibrium point is established at 21,777 units per month in 200 gr. of packaging, the period of return on investment (PRI) will be from the 4.25 years. Finally the Leopold matrix determined the environmental impacts of the project, without substantial involvement and therefore the project is environmentally feasible
