要約:The main objective of the research was to determine the presence or absence of Salmonella spp. in commercial eggs from certified farms A, B and C in Bolivar canton. For this purpose, a survey was applied to determine the risk factors and a laboratory technique based on bacterial isolation was used to identify the presence of Salmonella spp. by favoring its growth in a controlled environment, which facilitated its detection. The procedure was based on extracting a sample of egg yolk and applying it to a previously prepared selective culture (Selenite Cystine Broth). The variables studied included the age of the laying hens, certified farms and the presence of Salmonella spp. The results of the survey applied to the farms regarding risk factors confirm that the biosecurity practices on the farms comply with the recommended standards. As a result, farms A, B and C showed a total absence of this bacterium in the samples analyzed; therefore, the hypothesis put forward in the research is accepted. Thus, it is concluded that the certified farms have adequate application of biosecurity norms and comply with the standards required to prevent contamination, thus guaranteeing the safety of eggs from certified farms, avoiding contagion in the people who consume them, which contributes favorably to public health.
