Propuesta de manual de seguridad y salud del trabajo en unidades de docencia, investigación y vinculación de la Carrera de Agroindustria

This present research was carried out in the Units of Teaching, Research and engagement in the School of Agro-Industry at Escuela Superior Politécnica Agropecuaria de Manabí, Manuel Félix López, which has four agro-industrial workshops, namely Meat; Fruits and vegetables; Flour and balanced meals; and Dairy Products, it is located in Bolívar Canton in the province of Manabí. Its development lasted eight months, period in which the Occupational Safety and Health Manual for the aforementioned agro-industrial workshops took place. There was made a descriptive, a field and a literature research, which served as support. Deductive-inductive and analytic-synthetic methods allowed to analyze the process of activities to identify their respective risks. The observation method was used to determine the work environment in different areas. An interview was applied to the technicians in charge. In the first stage, a definition of processes was performed, and then represented graphically using the ASME symbology in order to facilitate understanding. In the second stage, the risk matrix was prepared according to the working place, established by the Ministry of Labour in Ecuador for the identification and analysis of occupational hazards workers are exposed to in their daily work. Based on the aforementioned elements it was proceeded to develop the occupational Safety and Health Manual for people who use the workshops, so that they are aware of the risks immersed in the process, turning out possibly to mitigate them.
