Zusammenfassung:The purpose of the research was to apply a manual of Good Manufacturing Practices in the “Manatos” micro-enterprise in order to contribute to the improvement of the quality of the processed peanuts. For this purpose, an analytical-descriptive study was applied that consisted of two stages. In the first stage, a diagnosis of compliance with GMP was made, which showed a percentage of 34%; In the interviews with the personnel in charge, they indicated that the microenterprise still did not meet the objectives set and in the microbiological analyzes of the processed products (Salprieta, peanut paste and peanut grains) they were outside the ranges established by the NTE INEN 2570 standard: 2011. In the second stage, an activity plan was developed for the preparation of the BPM manual and for its application, training was carried out for the personnel in charge of the production and administration area of the company. After this, it was verified that regulatory compliance reached 86%, while the microbiological analyzes carried out were already within the established technical standard. This confirms that through the research work carried out, the quality of the peanuts processed in the micro-enterprise was improved, ensuring food safety.
