description The objective of this research was to obtain bioethanol from waste such as fruits and vegetables from the markets in Calceta and Quiroga. It was developed in a randomized block design with three treatments and four repetitions that respectively generated 12 experimental units. Each treatment consisted of 5,67 ml of yeast (Saccharomyces cerevisiae), 0,50 dm3 of molasses and 1,81 g of urea. Treatment one (T1) was made up of fruits, treatment two (T2) of vegetables and treatment three (T3) of fruits and vegetables. Fruits and vegetables were collected for 2 weeks, once the raw material collection and preparation of the experimental units were finished, the anaerobic fermentation process of each treatment was started for eight days following the specifications of Pari (2013). Finally, it was possible to obtain bioethanol from fruits and vegetables, with T1R4 being the treatment with the highest degree of alcohol, with a value of 39% of which 2668 ml was obtained. According to the degrees of alcohol obtained, by means of Tukey's analysis of variance through the SPSS version 20 program, the hypothesis raised in the research is accepted. The economic analysis of the best treatment using the cost of production method determined a value of $2,75 for each dm3 of alcohol. In conclusion, the production of bioethanol from these wastes is economically feasible, since it promises the concrete perspective of a more sustainable energy reality.

Se desarrolló en un diseño por bloques aleatorizado con tres tratamientos y cuatro repeticiones que respectivamente generaron 12 unidades experimentales. Cada tratamiento estuvo compuesto por 5,67 ml de levadura (Saccharomyces cerevisiae), 0,50 dm3 de melaza y 1,81 g de urea. El tratamiento uno (T1) se compuso de frutas, el tratamiento dos (T2) de verduras y el tratamiento tres (T3) de frutas y verduras. Se recolectó frutas y verduras durante 2 semanas, una vez terminada la recolección de la materia prima y preparación de las unidades experimentales, se comenzó el proceso de fermentación anaeróbicamente de cada tratamiento durante ocho días siguiendo las especificaciones de (Pari, 2013). Finalmente, se logró obtener bioetanol a partir de las frutas y verduras, siendo el T1R4 el tratamiento con mayor grado de alcohol, con un valor de 39% del mismo que se obtuvo 2668 ml. De acuerdo con los grados de alcohol obtenidos, mediante el análisis de varianza de Tukey a través del programa SPSS versión 20 se acepta la hipótesis planteada en la investigación. El análisis económico del mejor tratamiento mediante el método costo de producción, determinó un valor de $2,75 por cada dm3 de alcohol.
