Sumari: | The research was carried out at the GAD slaughterhouse. This research was carried out in the Municipal District of Bolívar, with the objective of evaluating the main sources of microbiological contamination in the cattle slaughtering process. The microbiological analyses were carried out according to the NTE-INEN 1338 standard, which establishes the microbiological requirements and the number of individuals to be analyzed. Counts of mesophilic aerobes, Escherichia coli, Staphilococus aureus and Salmonella spp. were carried out by means of rapid determination techniques such as Petrifilm plate count. The initial diagnosis of the establishment was made and based on the deficiencies found, we proceeded with the corresponding analysis of surfaces or areas of the process, for which we applied the technical guide for microbiological analysis of surfaces in contact with food and beverages, ministerial resolution No. 461 - MINSA, NTE INEN-ISO 18593 and the microbiological control of surfaces was done with the techniques (Official Association of Agricultural Chemists) AOAC. Statistically, there is no significant difference (p≥0,05) in the number of mesophilic Aerobic, Escherichia coli, Staphilococus auresus and Salmonella spp colony forming units, but their mean contents were contrasted with the acceptance and rejection criteria of the mentioned norm, giving as a result that only for Escherichia coli they were elevated and as for Salmonella spp PRESENCE was detected with an occurrence of 8,3%. The high content of Escherichia coli is associated with the proximity of the slaughter centre to the oxidation lagoon of the city. |
