| Crynodeb: | The purpose of this research was to evaluate the influence of doses of mint (Mentha piperita L.) leaf extracts on the antimicrobial activity against strains of Staphylococcus aureus, Salmonella and Escherichia coli. A bifactor A*B experimental design was used in a completely randomized design, obtaining nine treatments with three replications. Subsequently, phytochemical analysis was carried out to determine the presence of saponins, tannins, phenols, terpenes and flavonoids using specific tests, such as the foam test, ferric chloride, Liebermann-Burchard and Shinoda, respectively. The antimicrobial test was carried out through the diffusion method on paper discs according to Kirby-Bauer, with as reference the measurement of the diameter of the inhibition zone of the positive control and the measurement of the halo of the extract. A low content (+) of terpenes and saponins was obtained, a moderate presence (++) of flavonoids and tannins, while a high presence (+++) of phenols was obtained. The methanolic extract of paper mint leaves showed sensitivity for E. Coli a minimum halo of 6mm at 25% and a maximum diameter of 7.67mm at 100%, while for Staphylococcus aureus a minimum value of 0.00mm was obtained at 25% and a maximum of 7.33mm at 100%, on the other hand, for Salmonella the minimum value was obtained 0.00mm at 25% and a maximum value of 7.67mm at 100% concentration, therefore, it is considered that the concentrations significantly influence the activity antimicrobial, because by increasing the dose of extract it presented better antimicrobial effectiveness for pathogenic strains (Escherichia coli, Staphylococcus aureus and Salmonella). |
