Riassunto:The research aimed to evaluate the effect of solvents and their concentrations on the yield and physical characteristics of the natural pigment extracted from red dragon fruit (Hylocereus undatus) peels. An experimental design with six treatments and three replications, totaling 18 experimental units, was carried out. The Analysis of Variance (ANOVA) indicated that the treatments had a significant effect (p<0.05) on the density variable. According to Tukey’s test at a 5% probability level, ethanol showed the highest average density (0.95) compared to water (0.92), suggesting that ethanol was the most effective solvent in this aspect. Regarding colorimetry, to achieve the best red and yellow tones based on the CIELAB color space parameters, treatment T1 (Water 0.10%) was the most suitable. Additionally, it showed better performance in microbiological analyses, with acceptable mold and yeast values, evidencing compliance with basic hygiene standards during preparation. It is concluded that water is the recommended solvent due to the intensity of the pigment color, although ethanol provides better density.
