Additionally, essential conditions for the preservation of seafood and meat products were not guaranteed. Furthermore, 59.62% of merchants had not participated in training courses and lacked knowledge on the subject. Based on these findings, a guide was developed focusing on ISO 14001 and INEN 2687:2013, which was reviewed by two experts selected for their knowledge, sources of argumentation, and competence, leading to improvements in its wording and justification. Subsequently, the guide was presented to market authorities and merchants to enhance their knowledge, assess the market’s current state, and promote compliance with regulations, as hygiene and environmental sanitation practices were not being implemented, negatively impacting service quality, food safety, and waste management. |

Para ello, se emplearon los métodos inductivo-deductivo, analítico-sintético y estadístico, y las técnicas de observación, encuesta y entrevista, las cuales contribuyeron a conocer el manejo y estado actual del mercado, determinando un incumplimiento del 50 % de la norma INEN 2687:2013 en los dos sectores de comercialización, debido a que actualmente no se evalúa, regula o tiene como base alguna norma de saneamiento para el correcto funcionamiento de los puestos comerciales y el establecimiento en general, así mismo, no se garantizan las condiciones necesarias para la conservación de los mariscos y cárnicos, a su vez, el 59,62 % de los comerciantes no han participado en cursos o capacitaciones, desconociendo del tema.
