| Summary: | This research was developed at the Escuela Superior Politécnica Agropecuaria de Manabí Manuel Félix López, the objective for this study was to determine the effect of phenolic compounds from the leaves of wild bitter melon (M. charantia) in a coating for the conservation of the physicochemical and microbiological characteristics in pork fillets. The phenolic content of the extracts in wild bitter melon leaves was evaluated, the extraction was carried out by the maceration method with an ultrasound bath using 96% drinking alcohol, the quantification of the total phenol content was carried out according to the Folin method. -Ciocalteu obtaining a value of 268.09 mgGAE / mL. The doses of phenolic compounds used for the pork fillets were 0.5; 0.75; 1.00; 1.25 and 1.50%, evaluating the physicochemical and microbiological characteristics and useful life on days 0, 7, 14 and 21, considering the days the blocking variable for this, a DBCA was used. The results of this research show that the physicochemical variables were within the values of the established norms, while in the microbiological analyzes T4 and T5 had positive effects on pork fillets, inhibiting the growth of the aerobic mesophilic variables and E. coli., these being the best treatments. Regarding the shelf life of pork fillets, it was shown that they have a few useful days (two days for mesophilic aerobes and one day for E. coli). |
