description Ecuador is a multi-diverse, multi-ethnic, multicultural country with immense natural and identity heritage that makes it unique in the world. As part of these riches, there is a great variety of traditions and customs of its people, one of which is related to the vast quantity of ancestral drinks that have been known since ancient times through the history of the people. These drinks are made through fermentation and distillation that have a high dose of culture, since their elaboration is transmitted from generation to generation and this tradition is of substantial importance in the indigenous communities of Ecuador. The main objective of this research work was to highlight the importance of these liquors as a cultural and identity heritage of the northern zone of the country, so that through the creation of a recipe book their intangible value can be preserved and disseminated. This work was developed in the province of Imbabura given its gastronomic diversity and feasibility for the study. The results obtained from the mentioned research give a positive account about the utility and relevance that will have the elaboration of a recipe book of innovative cocktails based on ancestral liquors.

Como parte de esas riquezas se cuentan a una gran variedad de tradiciones y costumbres de su pueblo, una es aquella relacionada a la vasta cantidad de bebidas ancestrales que desde tiempos muy remotos se conocen por medio de la historia de los pueblos; estos brebajes son elaborados mediante fermentaciones y destilados que poseen una alta dosis de cultura, ya que su elaboración se transmite de generación en generación y esta tradición es de sustantiva importancia en las comunidades indígenas del Ecuador. El objetivo principal de este trabajo de investigación fue resaltar la importancia de estos licores como un patrimonio cultural e identitario de la zona norte del país, para que mediante la creación de un recetario se pueda conservar y difundir su valor intangible. Este trabajo de titulación se desarrolló en la provincia de Imbabura dada su diversidad gastronómica y factibilidad para el estudio.
