The aim of this article is to identify and value the innovation processes that are generated from the implementation of a Protected Designation of Origin (PDO) of olive oil in Andalusia, Spain. A synthetic indicator of innovation and environmental practices was constructed, based on information collected via surveys carried out in mills and interviews to key actors. The results showed differences between the mills that have PDO and those that do not have the seal. The DOP mills reached higher average values in the indicators of innovation and greater homogeneity, mainly in the oil production process. The values were lower in aspects related to organizational-commercial innovations and product differentiation. However, in terms of environmental practices, mills with PDO have not registered statistically significant differences with respect to mills that do not have the sign of quality. |

However, in terms of environmental practices, mills with PDO have not registered statistically significant differences with respect to mills that do not have the sign of quality.La implementación de herramientas de valorización de alimentos con identidad territorial tales como las denominaciones de origen protegidas poseen múltiples efectos territoriales, destacándose los procesos de gobernanza territorial, mejoras en la calidad así como innovaciones tecnológicas, organizacionales y en el cuidado del ambiente. En tal sentido, este trabajo tiene como objetivo contribuir con una propuesta metodológica para identificar y valorizar los procesos de innovación que se generan a partir de la implementación de una Denominación de Origen Protegida (DOP) de aceite de oliva en Andalucía, España. Para responder el objetivo, se construye un indicador sintético de innovación y de prácticas ambientales, a partir de información recabada vía encuestas realizadas en las fábricas de aceite de oliva y entrevistas a actores claves. Los resultados muestran que las fábricas que poseen DOP alcanzan valores medios superiores en los indicadores de innovación y una mayor homogeneidad, principalmente en el proceso de elaboración de aceite y, en menor medida, en aspectos referidos a innovaciones organizativas-comerciales y diferenciación del producto.
