description This article explores the construction of the concept of typical seafood products in five localized coastal markets (LCM) in Chile. The literature review shows that studies on typicality in these markets are scarce, so this paper contributes to the debate on the importance of typical foods in these organizations. The methodology used was ethnographic, complemented with questionnaires and interviews and documentary research. Among the results obtained, it was found that the typicality of marine products is constructed by key actors in the market – consumers, artisanal fishers, and merchants, who grant meanings and values to border-marine foods – that is, foods from the particular ecosystems on the edge of coastal territories and the coastal zone. It is concluded that these meanings are related to the natural resources, the abundance of the product, the territorial roots, the frequency of consumption, the symbols, and the recognition of the work of those who dedicate themselves to fishing. The study opens a line of research on artisanal fishing and coastal markets from the approach of localized agri-food systems and may be useful for the design of policies aimed at such markets.

La revisión de la literatura muestra que los estudios sobre la tipicidad en dichos mercados son escasos, por lo que con este trabajo se aporta al debate sobre la importancia de los alimentos típicos en estas organizaciones. La metodología utilizada es de carácter etnográfico, complementada con cuestionarios y entrevistas y con investigación documental. Entre los resultados obtenidos se encontró que la tipicidad de los productos marinos es una construcción de actores clave del mercado: personas dedicadas al consumo, a la pesca artesanal y al comercio, quienes otorgan significados y valores a los alimentos bordemarinos, es decir, provenientes de los ecosistemas particulares que se forman en el borde de los territorios y de la zona costera. Se concluye que dichos significados están relacionados con los recursos naturales, con la abundancia del producto, con el arraigo territorial, con la frecuencia del consumo, con los símbolos y con el reconocimiento al trabajo de quienes se dedican a la pesca. El estudio abre una línea de investigación sobre la pesca artesanal y los mercados costeros desde el enfoque de los sistemas agroalimentarios localizados y puede servir para el diseño de políticas dirigidas a tales mercados.  O objetivo do artigo é explorar a construção do conceito de tipicidade dos alimentos marinhos em cinco mercados locais costeiros no Chile. A revisão da literatura mostra que os estudos sobre a tipicidade nesses mercados são escassos, de modo que, com este trabalho, se contribui para o debate sobre a importância dos alimentos típicos nessas organizações. A metodologia utilizada é de caráter etnográfico, complementada por questionários e entrevistas e por pesquisa documental. Entre os resultados obtidos, encontrou-se que a tipicidade dos produtos marinhos é uma construção de atores chave do mercado: pessoas dedicadas ao consumo, à pesca artesanal e ao comércio, que atribuem significados e valores aos alimentos de bordemar, ou seja, provenientes dos ecossistemas particulares que se formam na borda dos territórios e da zona costeira. Conclui-se que esses significados estão relacionados com os recursos naturais, com a abundância do produto, com a conexão territorial, com a frequência do consumo, com os símbolos e com o reconhecimento ao trabalho daqueles que se dedicam à pesca.
