Gaia:Introduction: waste generation in Mexico is considered a public problem, since its mismanagement generates multiple problems with socio-territorial impacts. Therefore, waste geography is a relevant sub-discipline to understand the patterns and processes of waste generation. Objective: to analyze the ways of waste generation and use in the production of barbecue, from the perspective of waste geography. Methodology: it consisted of the graphic representation of the networks that integrate the productive system focused on the elaboration of barbecue. As well as the forms of waste generation and utilization in the production chain. The information was obtained through fieldwork carried out between 2023 and 2024, from semi-structured and informal interviews and the development of a field diary. Conclusions: the need for the circular economy to take into account aspects such as interpersonal networks, the organization of the waste chain, and partnerships between actors in order to promote proper management is highlighted. The importance of waste geography as an analytical perspective that allows the construction of public policies with a territorial approach is emphasized.
