Using ultraviolet-visible spectrophotometry, the amount of caffeine and total polyphenols was quantified, and concentrations of 71.7 and 55.76 mg·L-1 were obtained, respectively. Finally, the spray drying technology was applied to obtain the water-soluble powdery solid. For the characterization of the product, solubility tests were carried out, which resulted in a dissolution time when hot (close to boiling temperature) of less than 30 seconds and when cold (16 °C ± 2 °C) of less than 3 min. The pH and the total ash content were determined, which were 5.50 and 13.87%, respectively. From the microbiological evaluation it was found that the product was free of mesophilic aerobic microorganisms. The copper, zinc and iron content, determined by atomic absorption spectrophotometry, was 12.35, 234.50 and 19.35 mg·kg-1, correspondingly; lead was not detectable. The results obtained were consistent with the NTE INEN 1122:2013 regulation related to the requirements of soluble coffee obtained by spray drying. This research lays the foundations for the industrial development of a water-soluble product based on an aqueous extract of I. guayusa leaves, rich in caffeine and polyphenols.

Se utilizó la decocción a reflujo como método de extracción sólido líquido; las mejores condiciones para extraer la mayor cantidad de cafeína y polifenoles fueron con 15 g de hojas de guayusa en 100 mL de agua destilada, a ebullición por 30 min. Mediante espectrofotometría ultravioleta-visible se cuantificó la cantidad de cafeína y de polifenoles totales, y se obtuvieron concentraciones de 71,7 y 55,76 mg·L-1, respectivamente. Finalmente, se aplicó la tecnología de “spray drying” para obtener el sólido pulverulento hidrosoluble. Para la caracterización del producto se realizaron pruebas de solubilidad, las cuales dieron como resultado un tiempo de disolución en caliente (cercano a la temperatura de ebullición) menor a 30 segundos y en frío (16 °C ± 2 °C) menor a 3 min. Se determinó el pH, y el contenido de cenizas totales, los cuales fueron 5,50 y 13,87%, respectivamente. De la evaluación microbiológica resultó que el producto estaba libre de microorganismos aerobios mesófilos. El contenido de cobre, zinc y hierro, determinado mediante espectrofotometría de absorción atómica, fue de 12,35; 234,50 y 19,35 mg·kg-1, correspondientemente; el plomo resultó no detectable. Utilizou-se a decocção por refluxo como método de extração sólido-líquido; as melhores condições para extrair a maior quantidade de cafeína e polifenóis foram com 15 g de folhas de guayusa em 100 mL de água destilada, em ebulição por 30 min. Por meio de espectrofotometria ultravioleta-visível, quantificou-se a quantidade de cafeína e polifenóis totais, obtendo-se concentrações de 71,7 e 55,76 mg.L-1, respectivamente. Finalmente, aplicou-se a tecnologia de "spray drying" para obter o sólido pulverulento hidrossolúvel. Para a caracterização do produto, foram realizados testes de solubilidade, os quais resultaram em um tempo de dissolução a quente (próximo à temperatura de ebulição) menor que 30 segundos e a frio (16 °C ± 2 °C) menor que 3 min. Determinou-se o pH e o conteúdo de cinzas totais, que foram 5,50 e 13,87%, respectivamente. Da avaliação microbiológica, resultou que o produto estava livre de microrganismos aeróbios mesófilos. O conteúdo de cobre, zinco e ferro, determinado por espectrofotometria de absorção atômica, foi de 12,35; 234,50 e 19,35 mg.kg-1, respectivamente; o chumbo resultou não detectável. Os resultados obtidos foram coerentes com a norma NTE INEN 1122:2013 relacionada aos requisitos de café solúvel obtido por "spray drying".
