Coatings were made from various hydrocolloid matrixes (carboxymethylcellulose, hydroxypropylmethylcellulose and unflavored gelatin), glycerol (used as a plasticizer) and water (used as a solvent). All coatings were applied through immersion. Treatments were arranged in a Completely Randomized Design. We evaluated the following physical-chemical dependent variables: soluble solids, total acidity, pH, degree of ripeness, physiological weight loss and freeze damage. We concluded that post-harvest storage at 8°C±2°C temperature had a positive effect on the life span of oranges keeping them in good conditions for up to 8 weeks. At room temperature, the fruit completely decayed in the sixth week. Coatings had less effect on organoleptic quality during the storage process.

Coatings had less effect on organoleptic quality during the storage process.Esta investigación tuvo como objetivo aumentar la vida útil de las naranjas criollas mediante el recubrimiento con hidrocoloides y el manejo de temperaturas de almacenamiento en postcosecha. Se consideraron tres formulaciones de recubrimientos y un testigo absoluto, combinados con dos temperaturas de almacenamiento (25°C±3°C y 8°C±2°C). Los recubrimientos se elaboraron usando distintas matrices hidrocoloides (carboximetilcelulosa, hidroxipropilmetilcelulosa, gelatina sin sabor), glicerol como plastificante y agua como solvente, aplicadas mediante proceso de inmersión. Las variantes se dispusieron siguiendo el esquema del Diseño Completamente al Azar. Se evaluaron variables físico-químicas tales como: sólidos solubles, acidez total, pH, índice de madurez, pérdida fisiológica de peso, daño por frío. Se concluye que el almacenamiento postcosecha de las naranjas a temperatura de 8°C±2°C influye favorablemente en la vida útil de las naranjas considerándola en buen estado hasta la octava semana. A temperatura ambiente, las narajas se deterioraron completamente a la sexta semana de evaluación.
