总结:Collagen is the most abundant protein of animal origin. This research has the objective of extracting functional collagen from the skin of the tail of Tuna (Thunnus atlanticus) in acid medium, using a commercial sample from Cumaná, Sucre state, Venezuela. Applied experimental research optimized the extraction method of soluble collagen in 1.5 and 5.0% v/v acetic acid, measuring percentage of moisture, solid residues and pH, ICP-OES was applied for the identification of metals, and chromatography paper radial to identify glycine and proline by comparison of Rf with standards. The collagen obtained with the lowest acid concentration satisfied the established pH standard (NTC 3750). The humidity was 90% and the solid residue 10%. The presence of Co, Pb, C, Ni, Si, Mn, Fe, Cr and Cu was detected by ICP-OES of which Fe, Mn and Si were the far most abundant ones. Fe and Mn are cofactors in biochemical reactions of the collagen while the Si might form part of the molecular structure of the tuna skin. The concentration of Pb is far below the permissive value of Pb in tuna muscle and should be of no concern. Hg, Zn and Al were not detected. Glycine and proline were identified in both samples, characteristic amino acids of collagen. These properties of the collagen of the skin of the tail of T. atlanticus, are an important contribution for an environmental liability of the fishing industry, its possible use in the production of collagen, will contribute to reduce environmental pollution in coastal areas.
