There are several causes that influence this situation, myths and beliefs that are based on the risk you have on health, creating a bad image of pork and an uninhabited population consumption. The objective of the study was to evaluate the perception of the professionals about human health towards the nutritional and sanitary quality of the consumption of pork through 400 surveys in “Distrito Metropolitano de Quito”. It was determined that pork provides less fat and total calories than beef or chicken; in relation to the contribution of vitamins and minerals, the concentration of water soluble vitamins such as thiamine is ten times the value found in beef. It was also shown that more than 50 per cent of professionals classified chicken meat as very beneficial for health and recommended for consumers compared to other meats. In conclusion, this study showed that 51.3 per cent respondents had a positive perception about pork and 48.8 per cent had a negative one, which specifically shows poor knowledge about the characteristics of this type of protein and the properties that it contributes in the diet of the population, causing a bad image for this type of meat. It is evident that respondents do not see this type of meat as healthy since most of them think that there are more problems than benefits about their consumption, considering it harmful to health due to a high content of fat, cholesterol and being related to diseases that will be transmitted to the human being, among these the cysticercosis that awakens an important expectation in the country. |
