Résumé:The service related to tourism within the city of Ambato is booming and according to data from the national information service of Ecuador state that this activity is among the main income activities within the city that is why it is of vital importance to have adequate hygiene requirements within establishments dedicated to the food and beverage service to prevent the proliferation of microorganisms. Food safety has been biased from a conceptualization that has not entered the food service; in the norm 067-2015-GG ARCSA already established sanitary requirements for collective food establishments. The quality in these establishments lack a non-measurable objective focus that has resulted in a possible risk for consumers and limits the gastronomic development of the city and the province since its application is voluntary. The research focuses on conducting a descriptive and observational study based on a checklist of good manufacturing practices of the ARCSA standard in the restaurants of the city of Ambato of second, third and fourth category according to the MINTUR, in order to create a documentary model of application of the pre-requisites in said establishments to guarantee innocuousness in the service offered within the city of Ambato.
