Therefore, the ontrol and guarantee of the quality of the products is a challenge, which must be met by obligation in terms of hygiene, food safety, for export and for internal trade, especially in aspects that may generate reactions detrimental to public health. This study aims to determine the incidence of Listeria monocytogenes and Staphylococcus aureus in the Nono dairy processing plant, located in the northwestern region of the capital. The objective was also to identify the critical points where the proliferation and incidence of pathogenic microorganisms and hygiene indicators, such as L. monocytogenes and S. aureus respectively, which may directly or indirectly affect the product or food, generating certain conditions and diseases that have been detected by the consumption of contaminated dairy products. The study was carried out based on raw milk obtained from the University of the Americas, where it was started with the first microbiological analyzes, which would be immediately transferred to a food analysis laboratory certified by the SAE, also the Good Practices of Milking in this process. At the time of processing of milk products, it is confirmed that the raw material passes to a thermal process (pasteurization) to reduce the microbial load. Within the dairy processing area there are several critical points for the proliferation of microorganisms that should have been properly s elected based on specific criteria for the two study microorganisms, with the appropriate information the critical points were determined to proceed with the collection of samples at the time of the food preparation process. To make a good sampling, surface samples were taken before, during and after the process of manufacturing the different dairy products, at each of the critical points during three days of manufacturing products at the plant. On the other hand, in the aspect of food production, specific characteristics of GMP were evaluated that are linked to the issue of food contamination and food safety. As for the method of determination of S. aureus, a modern swab method developed by 3M was used, which consists of sowing directly after the swab with Quick Swab that are modern swabs with a Letheen broth capsule for the immediate inoculation of microorganisms that they can be sown after swab on Petrifilm Staph Express plates designed to give microbiological counts to quickly sowing the swab broth is exactly what is required for the plate and thereby direct sowing. In fresh cheese that is the main product of analysis, microbiological counts for S. aureus are permissible up to an amount of 102 according to NTE INEN 1528: 2012. Por lo tanto, el control y la garantizarían de la calidad de los productos es un reto, que debe ser cumplido por obligación en cuanto a temas de higiene, e inocuidad de alimentos, para exportación y para comercio interno, sobre todo en aspectos que puedan generar reacciones perjudiciales para la salud pública. El presente estudio tiene como objetivo determinar la incidencia de Listeria monocytogenes y Staphylococcus aureus en la planta de procesamiento de lácteos de Nono, ubicada en la región noroccidental de la capital. También se tuvo como objetivo identificar los puntos críticos donde la proliferación e incidencia de microorganismos de carácter patógeno e indicadores de higiene, como lo son la L. monocytogenes y el S. aureus respectivamente, que puedan afectar directa o indirectamente al producto o alimento, generando ciertas afecciones y enfermedades que se han detectado por el consumo de productos lácteos contaminados. El estudio se realizó a partir de la leche cruda obtenida de la Universidad de las Américas, donde se partió con los primeros análisis microbiológicos, que serían trasladados inmediatamente a un laboratorio de análisis de alimentos certificado por el SAE, también se determinó las Buenas Prácticas de Ordeño en este proceso. En el momento del procesamiento de productos derivados de la leche se corroboro que la materia prima pase a un proceso térmico (pasteurización) para reducir la carga microbiana. Dentro del área de procesamiento de productos lácteos existen varios puntos críticos para la proliferación de microorganismos que debieron ser debidamente seleccionados en base a criterios específicos para los dos microorganismos de estudio, con la información adecuada se determinaron los puntos críticos para proceder a la recolección de muestras en el momento del proceso de elaboración de alimentos. Para realizar un buen muestreo se tomaron muestras de superficies antes, durante y después, del proceso de elaboración de los diferentes productos lácteos, en cada uno de los puntos críticos durante tres días de elaboración de productos en la planta. Por otro lado, en el aspecto de producción de alimentos se evaluaron características específicas de BPM que están ligadas al tema de contaminación de los alimentos e inocuidad alimentaria. En cuanto al método de determinación de S. aureus, se utilizó un método de hisopado moderno elaborado por 3M que consiste en sembrar directamente después del hisopado con Quick Swab que son unos hisopos modernos con una capsula de caldo Letheen para la inmediata inoculación de microorganismos que pueden ser sembrados después del hisopado en las placas Petrifilm Staph Express diseñadas para dar conteos microbiológicos al de manera rápida la siembra del caldo del hisopo es exactamente la requerida para la placa y con ello se realiza una siembra directa. En el queso fresco que es el producto principal de análisis, los recuentos microbiológicos para S. aureus son permisibles hasta una cantidad de 102 según la norma NTE INEN 1528:2012.
