The losses that occur in the postharvest management are due to damages caused mainly in the productive process because of biotic and abiotic factors, which have not been quantified. For this reason, the present study aims to characterize the postharvest management of organic bananas, quantify the losses, and know the marketing flow. The study was carried out in an organic banana plantation located in Vinces province of Los Ríos. Statistical analyzes were performed using a completely randomized block design in 7 x 2 factorial arrangement with three repetitions. The variables analyzed were the physical and chemical characteristics of the fruit, the losses (%) and through the records; the marketing flow that occurs from the banana industry to the port. In most cases, it was possible to determine that there was an effect of the harvesting period on the variables of weight, length, diameter, crust color, firmness, and acidity. This same tendency was observed when the variables of weight, length, diameter, and acidity were analyzed depending on the quality of the fruit. The mainly fruit loses are because of open sides, physical damage, red spot, and fruit deformities. The average annual yield of one hectare of banana is 1760.8 cases, of which 85,9% goes to the first-class export market, 4,9% export of second- class and 9,2% for the national market. Considering the marketing flow of the fruit is determined that it is done in 24 phases from the harvest to the port of shipment, which are carried out in a period of 4 hours. |
