Shrnutí:The present study was carried out within the Quito canton, with the objective of evaluating the quality and knowing which activities within the check list have the highest incidence for the sanitary and hygienic quality of the milk. It took three altitudinal floors and two sizes of the UPA, having as best results for sanitary quality all the producers that are in the lowest altitudinal floor that goes from 150 to 1800 meters above sea level and the large producers of the altitudinal floor greater than 3000 meters above sea level. In the hygienic quality the best results were the large producers of milk at a height between 1800 to 3000 masl and all the producers who are at a height of less than 1800 masl. All the aforementioned treatments complied with current INEN 9 regulations for raw milk. The results of the most influential activities in hygienic quality were: Some type of additional treatment is done to improve water quality, wash your hands during milking after each contamination, Disinfect the teats with a specific product for this (PRESELLADO), Instantaneously after the milking, the milk is cooled to 4 ° in less than 2 hours and in the sanitary quality there was only one highly significant activity which was: It has a milking order according to the CMT. In the collection centers, the results showed that only 35.71 percent of hygienic quality comply with the regulations, concluding that there is bad management in the cold since the quality of the farms does not exceed the averages shown by the collection centers.
