For this purpose, the antioxidant activity of propolis from Magdalena, San Miguel and the Chima was determined, where it was identified that the propolis from the Chima has a higher concentration of antioxidant at dilutions of 20 and 60 mg/mL, likewise, The antimicrobial activity against two Gram-positive bacteria (Staphylococcus aureus, Bacillus) and two Gram-negative bacteria (Escherichia coli, Salmonella) was determined, where the Chima propolis was found to be more effective against Escherichia coli with inhibition halos of 11,33 mm in diameter. The propolis from the Chima, because it has greater antioxidant and antimicrobial activity, was applied to the cheese as a natural preservative, leaving it to act for 21 days, during which time the degradation process began and bacteria such as Staphylococcus aureus appeared, which was identified by the Gram staining method. Finally, a cost-benefit analysis was performed, which determined that the cheese with propolis weighing 453,6 g cost $3,99. In conclusion, propolis from the Chima, being the best treatment, can be used in the food industry as a natural preservative. |
