Özet:Borojó is a non-traditional crop in Ecuador, it is found in tropical and subtropical climates, most of it is cultivated wild, there are no records that indicate that there is cultivation of borojó. According to (National Autonomous Institute of Agricultural Research). In the province of Orellana and Sucumbíos, it is estimated that there are 40 hectares planted and that the yield of borojó is 9.13 tons per hectare per year and the yield of the pulp is 5.6 tons per hectare." Consuming soda in large quantities is associated with a minimal intake of numerous vitamins, minerals and fiber. According to research in Ecuador, a person consumes an average of 50L per year of carbonated drinks. The high consumption of these drinks gives way to the production of similar drinks, but with nutritional values, creating more alternatives in the market. According to the bromatological analysis of the carbonated borojó pulp drink, the best treatment (T2). It provided us with the results of pH 3.3, °Brix12.1, Acidity 0.48, Proteins 7.06 and Vitamins 0.67, giving the final answer that the drink is very rich in proteins and vitamin C, concluding that the drink is suitable for consumption and is governed under the INEN ISO 1101 Standard. Considering all the benefits and acceptability of the carbonated drink based on borojó pulp, a commercial drink is proposed with its respective label, brand and a can packaging that allows our product to have greater acceptance in the market, in line with the requirements of the INEN 1334 Standard.
