| সংক্ষিপ্ত: | The present work was carried out in order to design a traceability system for the wheat flour product in the cooperative of industrialization and commercialization production Santa Fé (COOPINCOSAN), is a milling company focused on the industrialization and distribution of cereals, the traceability system was designed so that it allows the company to know the origin and distribution of its wheat flour product, For this, the following points were considered: identification of the production process (reception of raw material, production and dispatch of finished product); evaluation of current information through a checklist based on current regulations for traceability NTE ISO 22000 (2011); design and updating of documentation (records, manuals and procedures); Implementation of the traceability system designed and training to the company's personnel. The results of the initial audit revealed 86.96% non-compliance and only 13.04% compliance with the traceability system. These results facilitated the identification of opportunities for improvement and designed the traceability system to fit the needs of the company. For the implementation, the required documentation was prepared, which contains the traceability manual and the instructions for corrections and corrective actions that will allow, in case of emergency, to detail the steps to follow to withdraw the product from the market. Theoretical and practical training was carried out for all company personnel addressing specific issues in order to control and manipulate any traceability system appropriately. As a final part, a final audit was carried out to verify the traceability system using the same check list, resulting in the company now complying with 100% of the traceability system guidelines. In addition to this we designed a QR code that is linked to the official website of the company where information will be shown characteristics and production process of wheat flour in the company is also a means that allows to inform correctly about the products and services that are on offer for consumers. |
