Sumari:The business plan was carried out with the purpose of creating a company that is feasible for the production and commercialization of lupine (lupinus mutabilis) dehydrated in the city of Guaranda. This idea was developed using an inductive research methodology - descriptive approach; which is carried out through a documentary bibliographic analysis and a non-experimental field work, which includes the application of a survey, carrying out an agro-industrial process, a nutritional analysis in the facilities of the State University of Bolívar. The object of study is the population of Guaranda, from which a sample of 384 people was drawn, considering a confidence level of 95% and a margin of error of 5%. The results of this business plan lead to research at a descriptive and exploratory level, which allows demonstrating the commercial acceptance of lupine in Guaranda and its nutritional contribution, which sets the tone for developing a business plan that promotes production and marketing. of the product. By meeting these objectives, the predisposition to consumption of dehydrated lupine among the population of the city of Guaranda is concluded, mainly in young people aged 12 to 17 who live in urban areas. At the same time, it can be affirmed that the dehydrated lupine is a product whose nutritional contribution is rich in calcium, fiber and protein, it is made up of nutrients totally free of gluten and preservatives, capable of generating 2000 calories in 15 grams of the product
