Gastronomía ancestral y su influencia en el desarrollo de la actividad turística en la ciudad de Guaranda, provincia Bolívar, año 2022

This research was conducted in the city of Guaranda, which belongs to the province of Bolivar, and focused on analyzing the ancestral gastronomy and its influence on tourism development in the city. The methodology used was exploratory and descriptive, with a mixed approach through the application of interviews and surveys as a method for the collection of information to obtain the most important ancestral preparations that the city of study possesses, as well as to determine the influence that these preparations have on the tourist activity. The results derived from the research show 22 ancestral preparations that characterize the city of Guaranda and its heritage, it was also determined that these dishes do not have the necessary influence to motivate the visit of tourists, however it is possible to establish the ancestral gastronomy as a new alternative to energize the tourist activity in order to improve the offer that the city has. For this reason an ancestral gastronomic manual was created that will contain the necessary information about those dishes that tell the story of the city and in this way any visitor will be able to know and prepare the diverse gastronomy that this area has, after this it is concluded that the application of this manual in strategic places will help to safeguard and rescue these traditions.
