En el marco teórico se destacan las definiciones de autores las cuales están relacionadas con la oferta, servicio, demanda, tipos de restaurantes, empresas de alimentos y bebidas, entre otras. Se utilizaron herramientas de investigación como descriptiva la cual consiste en llegar a conocer las situaciones costumbres y actitudes predominantes a través de la descripción exacta de las actividades, objetos, procesos y personas, su meta no se limita a la recolección de datos sino a la predicción e identificación que existe entre dos o más variables, se aplicó también los métodos de encuesta, entrevista, estudios de caso, método de observación. Con todos los datos que se ha obtenido se ha procedido a identificar cuáles serían las dificultades por la cual no se ofertan una variedad de menú gastronómico en el cantón Bucay.The project is based on the analysis of the gastronomic offer offered by the canton, in order to identify the current problem with the lack of gastronomic diversity, studying the market and the acceptance of the design of a thematic restaurant with the analysis of supply and demand. The theoretical framework highlights the definitions of authors which are related to the supply, service, demand, types of restaurants, food and beverage companies, among others. Research tools were used as descriptive which consists of getting to know the prevailing customs and attitudes situations through the exact description of activities, objects, processes and people, its goal is not limited to data collection but to prediction And identification that exists between two or more variables, the methods of survey, interview, case studies, method of observation With all the data that has been obtained has proceeded to identify which would be the difficulties for which they are not offered a variety of gastronomic menu in the canton Bucay.UNIVERSIDAD DE GUAYAQUILLic.
