Riassunto:The "San Pedro de Licto" Raw Milk Collection Center is an association located in the Licto parish, Riobamba city and province of Chimborazo, which helps to improve the quality of life of each of its members and to contribute to the development of the parish. The objective of the research was to propose the implementation of a manual of good manufacturing practices (GMP) that will undoubtedly improve the characteristics of the milk. It began with the application of a check list based on the ARCSA DE 067- 2015 resolution to know the current situation of the Collection Center, 64% of non-compliance was reported being the section of hygiene requirements the most relevant, percentage that undoubtedly affects for certification, with these results it was evidenced that the quality of the raw material is the main problem, for this reason, a second check list was executed to diagnose the quality of the milk, based on the technical resolution No. 0217 AGROCALIDAD to evaluate the milk producers that make up the Collection Center, resulting in a 68% of non-compliance in several parameters required for proper milking. Both documents contributed to obtain the necessary information to know the real scenario of the Collection Center and the conditions of the raw material in charge of the producers. A training session was then conducted to the personnel and producers who are part of the Collection Center. This was followed by the preparation of a GMP manual that will make it possible to obtain safe products and improve the hygienic conditions under which the milk is handled.
