| Sažetak: | The research aims to identify the influence of food heritage on the quality of the service of the traditional hollows of the Guano canton, this research is descriptive and correlational, for which 2 analysis units have been formed, which are: service providers such as traditional hollow clients. The survey has been used as an instrument for collecting information, the results of which were tabulated and analyzed by statistical methods such as the Chi square, the same as validating the research hypotheses, which is why it is based on continuing to analyze the food practices and representations that values intrinsic and identity that are manifested through the traditional use of culinary skills such as cooking in a wood oven, fermentation in clay pots, the treatment of always maintaining food safety that helps improve the quality of service. To strengthen the problem investigated, the creation of a training plan aimed at service providers that can help conserve food heritage can improve adequate food security and, in turn, improve the service. |
