| Özet: | ABSTRACT: The main objective of this research study arises in response to the necessity to develop and diversify the tourism offer of the canton of Riobamba and the need to establish typical gastronomy as a fundamental heritage for tourism development. It highlights the importance of knowing and tasting the local cuisine as a cultural and sensory experience. The thesis investigates how Riobamba's typical gastronomy influences the development of local tourism, analyzing tourists' decision making, their perception of the authenticity of the experience and the impact on the local economy. In addition, initiatives and policies to promote traditional gastronomy as a tourist resource are explored, highlighting the importance of typical dishes as a tourist attraction, reflecting cultural identity and generating economic opportunities, mentioned several studies that explore the relationship between typical gastronomy and tourism, highlighting the importance of this resource to attract visitors and promote local development. |
