Итог:ABSTRACT: The main objective of this study was to confirm whether the "SAN DANIEL" crude palm oil extraction industry complies with the parameters established for compliance with Good Manufacturing Practices (GMP), in addition to the development of a Hazard Analysis and Critical Control Points (HACCP) Plan, with the purpose of achieving the respective certification. Besides, a visual evaluation of the plant facilities and the collection of information was carried out, also an internal audit was also carried out through a Check List based on the guidelines established by Executive Decree 3253. An internal audit was also carried out through a Check List based on the guidelines established by Executive Decree 3253, and in this way to be able to determine with the help of the statistician if the company really has the regulations of the Good Manufacturing Practices. With the information obtained, the HACCP Plan was developed, taking into account both the guidelines recommended by the FAO and the 7 principles established by the Codex Alimentarius. The results achieved show that the company has the parameters required by the laws and regulations in force in Ecuador for Good Manufacturing Practices, For the HACCP analysis, 2 PCC were determined in the Reception of Raw Material and its Sterilization, with this procedure, the preventive and corrective guidelines are established, for the subsequent elaboration of the HACCP Manual. The study was explanatory, qualitative and field, in addition, specific non-numerical data was obtained at the place of elaboration, which are interpreted and analyzed. based on BPM and the HACCP Plan for the crude palm oil extraction industry "SAN DANIEL".
