Zusammenfassung:In this survey was identified the secondary metabolites of sarsaparilla root in hydro-alcoholic solution. According to Metabolites were identified by screening phytochemical and thin layer chromatography and the results demonstrate the presence of flavonoids by UV-visible spectrophotometry quantitated getting a value expressed in Apigenin 5.92%. It was elaborated two drinks based on fruits providing a value to the root Agro industrial, using borojo and tamarind, they were selected for their strong taste and smell that allowed mask the unpleasant organoleptic characteristics of the extract. This study allow to obtain a drink with antioxidants, anti-inflammatory and diuretic properties. Quality control is executed at the end of the product, constancy, taste tests and quantification of flavonoids, which results acquired from the tasting indicated that 63% accept the drink. The percentage of flavonoids quantified and expressed in Apigenin is 1.42% in the drink borojo and 1.85% in the drink tamarind, the lifetime of the beverage exceeds 30 days.
