| Sumari: | This research presents the problem of devaluing the food heritage of canton General Antonio Elizalde, province of Guayas, and the inefficient development of Gastronomic Tourism in the locality. The methodology is a documentary, descriptive and correlational research based on bibliographic sources such as books, magazines, scientific articles, and undergraduate/postgraduate theses. The research design is non-experimental and cross- sectional since the survey was used as a data collection instrument. The application of research instruments was directed to representatives of local gastronomic establishments to evaluate the level of knowledge regarding cultural heritage, culinary techniques, and food culture and to tourists who visited the canton of General Antonio Elizalde to demonstrate the importance of gastronomic establishments, experience, and service concerning gastronomic tourism. The results obtained gave way to the proposal of a gastronomic map to be a technical instrument for local actors to conserve and give value to the food heritage of the locality. |
