Protocolos de bioseguridad y BPM para generar un ambiente seguro ante el Covid-19 en la empresa productora chocolates “Kallari” tena 2020

The "KALLARI" chocolate company is a leading exporter of high-quality cocoa and its derivatives, which have been recognized worldwide, thanks to its all-natural chakra products. In addition, this company, as part of the community development link, seeks the welfare of its workers, associates and consumers. Therefore, KALLARI is willing to implement Good Manufacturing Practices (GMP). The objective of this research was to develop a proposal for the implementation of Biosafety and GMP protocols to generate a safe environment for COVID-19. For the development of the research, we started with a check list fulfilling the diagnosis as the basis of the research, then, we proceeded with an observation of the personnel, in addition to surveys and interviews to evaluate the safety protocols and safety parameters in the processes. The initial diagnosis showed a low percentage of compliance with the parameters for Good Manufacturing Practices certification. In addition, thanks to the surveys and interviews, the following relevant results were obtained: 60% indicated that they are always afraid of contracting COVID 19 within the company and 80% of them mentioned that they would feel highly safe working with a BMP manual and a Biosafety Protocol. These results gave emphasis to the elaboration of the proposal for the implementation of Biosafety protocols and Good Manufacturing Practices to generate a safe environment against Covid 19 within the company.
