Seguridad Alimentaria y Calidad del Servicio de las Huecas Tradicionales de la Ciudad de Riobamba

The research called "FOOD SECURITY AND QUALITY OF SERVICE IN THE TRADITIONAL HUECAS OF THE CITY OF RIOBAMBA" was executed in accordance with an endorsement of interest of the tourism department of the decentralized autonomous government of the city of Riobamba according to the problems that were detected Based on the analysis of the variables, it deals with a basic investigation using the deductive / quantitative method of cross cutting. The economically active population of the city and the owners of the so-called traditional hollows were those who provided information through the application of surveys previously validated by experts, which were checked for their reliability by checking the Cronbach's alpha, the results tabulated in excel and analyzed in the software SPSS version 23, allowed to validate the incidence that both the susceptible food products and the sanitation have on the quality of the service for which according to the discussion the respective conclusions and recommendations were raised. The proposal based on the problem investigated proposed strategies for the design of a guide for good food safety practices in the traditional hollows of the city of Riobamba, which aims to facilitate the understanding of the correct processes of food handling itself that will improve At the same time, the quality of the service in the traditional hollows.
