الملخص:ABSTRACT: This research aims to determine the influence of environmental aspects on the access and uptake of food in homes in Riobamba city; several environmental conditions are responsible for the food insecurity of Riobamba's residents, putting their adequate nutrition at risk. For this, a survey was applied to 382 households in Riobamba City as a sample. The questionnaire was based on dichotomous questions from the ELCSA methodology, which are a set of established qualitative questions that look for the measure of food security from the household's perspective, as well as a Likert scale and structured questions. Next, the responses to the ELCSA scale were quantified and categorized according to the Rasch model after applying alternative modeling, grouping the categories, where the data processing and analysis were carried out in the Microsoft Excel package. Subsequently, two econometric models were estimated, a binary logistic regression model (logit) and a probabilistic model (probit), to choose the best option to fit the research. Finally, the selected model was run in the Stata MP-64 statistical package. Probit was the model most appropriate, according to the percentage of correct classification of 73.56%, and in conjunction with the analysis of marginal effects, it was determined that agricultural production, product handling, and food choice and variability, as well as gender, income, and household members, contribute significantly to the access and consumption of food in households in Riobamba City.
