Resumo:ABSTRACT: The main objective of this research is to analyze the relationship between ancestral food knowledge and cultural tourism in the San Juan parish, in the Riobamba canton, if we take into consideration that tourism has become one of the sources of income for the economy. national and international, since it generates new jobs and activates the economy. Among the problems that the parish of San Juan shows is the lack of information and devaluation of ancestral food knowledge since the new generations have been adapting to external cultures, in addition the inadequate use of ancestral knowledge, consequently, a limited gastronomic offer typical of the town, the little promotion and commercialization of dishes. The methods used in this research work were descriptive, field documentary, with a correlational, non-experimental design. Likewise, to obtain the results of the research, the survey technique was used, the same one that was applied to the residents of the parish and tourists who visit the San Juan parish. In relation to the results that were obtained, it is considered that it is essential to create a guide to ancestral techniques to safeguard ancestral food knowledge and cultural tourism, since there are several attractions of natural and cultural wealth that are not used, there is no tourist development, therefore which cannot be carried out properly due to lack of information. For this reason, disinterest is generated in those who wish to visit the San Juan parish. Keywords: Ancestral food knowledge, cultural tourism, tourism, strategies
