Summary:ABSTRAC The purpose of the project is to determine the feasibility for the implementation of a small and medium enterprise (SME) that processes breadfruit flour in the city of Santo Domingo. Through qualitative and quantitative methods, the real preferences of consumers are analyzed, resulting in a product acceptance of 93% by offering a product with high nutritional value, in 500g presentations at a price of $2.10. Through various factors it is reflected that it is optimal to implement an agro-industrial company within the study city, since it is presented as an alternative to flour compared to traditional foods, in this way the objective consumers benefit from the nutritional contributions that this fruit offers improving your health, and in turn takes advantage of the processing of little-known raw materials. With a positive net present value of $34,865.89 and an internal rate of return of 39.60%, which being higher than the Minimum Acceptable Rate of Return, the project is accepted when visualizing its feasibility through the main financial indicators. In addition, this research project has a cost benefit of $2.90, which shows that it is advisable to execute this idea as a possible investment in nutritious and safe food processing agro-industries that contribute to the change in the productive matrix and participate in the transformation of current food systems in a sustainable way.
