Sammanfattning:The production of broccoli (Brassica oleraceae) and celery (Apium graveolens) vegetables in the canton of Ambato is the primary economic income of farmers. Nowadays, there is an excessive production of broccoli which produces rampant commercialization of it. At the same time, the celery vegetable is deciduous; it causes considerable product waste, resulting in short-term waste and shrinkage of products due to the lack of correct storage techniques. This project describes and analyzes the storage techniques for broccoli and celery in order to extend the life of these vegetables, and it will help to avoid product losses; additionally, this project will be analyzed from the review of studies published such as Google Scholar, Scopus, ScienceDirect in 2010 and 2020. This study is based on the collection of information established by the PRISMA method to determine a post-harvest technique after analyzing the data obtained to get exemplary conservation of these vegetables in the canton of Ambato. The results will allow us to observe the different storage techniques that help us to preserve the products. The most reliable system is refrigeration since the moisture content of broccoli is around 88,60% and celery 98,50% that helps us preserve the moisture content, the organoleptic structure, and its vitamins and minerals, vegetables will extend their useful life and avoid wastage.
