| Resumo: | ABSTRACT: The study analyzes and documents the food culture in the Guamote cantonal capital, Chimborazo Province. This topic has not been the focus of recent studies and has long been considered a secondary aspect of tourism. The research is conducted through a documentary review and analysis of dimensions that constitute food culture, including representations, cultural identity, and culinary techniques. For this purpose, both documentary and field research were utilized, with a descriptive scope and a qualitative-quantitative, non-experimental approach. Additionally, field research was conducted through the administration of surveys to national and foreign tourists visiting the canton, and interviews were held with proprietors of traditional food and beverage establishments. The survey results indicate that both national and foreign tourists strongly support the preservation of ancestral culinary practices and techniques, the cultural identity of the populace, the transmission of gastronomic knowledge, and the sense of belonging among the indigenous groups of Guamote city. In conclusion, the study proposes strategies for safeguarding the food culture of Guamote city, including the creation of a cultural magazine entitled "Food Culture: A Journey Through the Identity of the Indigenous Groups of Guamote City." |
