Summary:Currently there is a great demand for protein, whether from vegetable or animal raw materials, likewise there are many technologies and methods used for extraction of protein of vegetable origin. This study is a systematic review and using the PRISMA method, 13 articles were selected that once analyzed, it was determined that the most widely used vegetable protein extraction methods are: alkaline method, enzymatic extraction, and ultrasound, sonication and phenol-tris. We concluded that alkaline extraction is an easy method to use and consists of solubilizing the proteins regulating the pH through the use of an acid and a base, the temperature and the extraction time are also factors that influence the performance of obtaining, while the ultrasound method is fast, clean, economically profitable and friendly with the environment because no chemical reagent is used. The protocols of these two protein extraction methods are described to be used by students and teachers of the Agroindustrial Career for various investigations.
