Vegetables from Chilca (Baccharis latifolia) and Pumin (Salvia squalenss) are known for their bactericidal properties against certain microorganisms reflected in some studies. The effectiveness of the extracts was verified through the antibiogram method (disc-plate) against pathogenic bacteria. The preparation of the vegetable raw material consisted of washing and drying, followed by the method of maceration and simple distillation, where four different extracts were obtained. Antibiogram tests were used for pathogenic microorganisms (E. coli, Salmonella and Listeria), applying the four types of extract to each antibiogram disc with three repetitions, obtaining twelve experimental units for each microorganism. After applying an analysis of variance with repeated measures, the following were identified as the best treatments: for E. coli, treatment DC2 (Chilca Distillate) was selected, with an inhibition halo corresponding to 13.9333 mm, it was also possible to identify MC3 (Chilca macerate) with an inhibition halo corresponding to 16.1333 mm and finally the DP1 treatment (pumin distillate) with an inhibition halo of 15.0667 mm corresponding to Salmonella as an effective treatment for Listeria. Once the investigation was completed, it was possible to determine that chilca extracts act effectively against E. coli and Listeria bacteria.

Once the investigation was completed, it was possible to determine that chilca extracts act effectively against E. coli and Listeria bacteria.Los extractos en la actualidad se han considerado como productos naturales, siendo trascendental en la industria alimentaria y farmacéutica siendo una de las propiedadades la acción antimicótica frente a los microorganismos, por tal motivo el trabajo de investigación se elaboró con la finalidad de evaluar la capacidad antimicrobiana de los extractos vegetales a partir de la Chilca (Baccharis latifolia) y Pumin (Salvia squalenss), conocidas por sus propiedades bactericidas frente a ciertos microorganismos reflejados en algunos estudios. La efectividad de los extractos se comprobó mediante el método de antibiogramas (disco – placa), frente a bacterias patógenas. La preparación de la materia prima vegetal consistió en un lavado y secado, posterior se empleó el método de maceración y la destilación simple donde se obtuvieron 4 diferentes extractos. Las pruebas de antibiogramas se emplearon a los microorganismos patógenos (E. coli, Salmonella y Listeria), aplicando los cuatro tipos de extracto en cada disco de antibiograma con tres repeticiones, obteniendo doce unidades experimentales por cada microorganismo. Tras la aplicación de un análisis de varianza con medidas repetidas se identificaron como mejores tratamientos a los siguientes: para E. coli, se seleccionó al tratamiento DC2 (Destilado de Chilca), con un halo de inhibición correspondiente a 13.9333 mm, también se pudo identificar como tratamiento efectivo para Listeria al MC3 (Macerado de chilca) con un halo de inhibición correspondiente a 16.1333 mm y finalmente el tratamiento DP1 (Destilado de pumin) con una halo de inhibición de 15.0667 mm correspondiente para Salmonella.
